Nucleotide Level in Meat and Fish Subproducts

Immediately after death, due to respiratory arrest, ATP breakdown process starts leading to the formation of catabolite nucleotides - inosine monophosphate (IMP), inosine (Ino) and, at a later stage, hypoxanthine (Hx).
